Why is it never directly acknowledged anywhere that Big Mom ate all those kids and Mother Caramel? It's quite obvious to quite a few people that she ate all those kids including Mother Caramel, I mean that's how she got the Soru Soru no Mi powers!

Blackbeard and Big Mom are two separate cases. The Yami Yami no Mi was already capable of allowing the user to negate other devil fruit powers so it's clear he sucked up the devil fruit power from Whitebeard's body and absorbed it before the power could respawn as a devil fruit. Linlin never had that ability and she somehow ended up with Caramel's devil fruit power after binge eating a giant croquembouche. Why was that Giant witness so horrified when he was looking at the aftermath when Linlin was looking for her friends? It's clear to me that she ate them because there's no way that a giant would be horrified at seeing a giant kid eating piles of sweets since Giants themselves eat a lot to begin with.
She ate caramel (which killed her) and it respawned in a fruit near her, which she also ate. Eating someone directly won't give you their devil fruit power (it'll give you food poisoning. I'm literally quoting oda here). It being linlin's birthday and all.
Probably because it's too unsuitable for part of their audiences that they chose to imply without confirming. Raised discussions too. So clever move I guess.

It really was never confirmed at all, it was just theorized that she did since this seems to be the most logical theory. Oda might even point out at some point in the series and we could be wrong. There is only one flaw in this theory since there's no blood in big mom's mouth, but she didn't either because oda doesn't want to reveal it or because one piece is for teens and showing blood in big mom's teeth is kinda not suitable for teens.

The reason that there might have been no blood is that she could have swallowed them whole.
A lot of times we don't see blood after a fatal sword wound, especially on expendable fodders. Maybe they omit bloody mouth. If she had bloody mouth, there wouldn't be any discussion here.
This might be an over shot but when you eat a devils fruits person's heart you gain their devil fruit powers. My reason is we see the Nika Fruit pulsing inside of luffy when he starts the drums. Blackbeard covered whitebeard basicly ate his heart, same with lin lin if she ate everyone she must has swallowed them whole thus swallowing Mothers fruit. The heart becomes the fruit.
I've always thought Blackbeard cannibalized part of Whitebeard's corpse. Good theory about the heart though.
