I'd say depends on how good your Haki is

Katakuri's fruit is only powerful because he uses his insane armament with it. Functionally, you could do all of his attacks with any liquid-substance generating fruit, just that venom would have an added bonus of poison and corrosiveness

However, if you do have Observation, you are practically a Logia, which proabably makes up for the loss in attack power. It might depend on the full potential of the venom fruit, but overall I think it's still better for a skilled user

Overall though, the majority of users probably wouldn't have the Haki required to use the mochi fruit to its fullest, so the venom one is better in terms of raw power. It depends on if your counting potential or immediate strength

I’d say Doku Doku no Mi, since it’s automatically ready to be lethal. While Mochi is only as good as one’s creativity. 😎
