Oh yeah luffy will totally win by the end of this arc. The current fight luffy might lose (can't say for sure because luffy is kinda winning), similar to alabasta, but there cannot be this much buildup for wano just for them to go home. As for big mom im not sure. She could easily go both ways, being defeated or retreating to get her own arc

Chopper, zoro, whitebeard, bepo, and law. dunno why you would dismiss chopper, in the manga he literally wins a fight against QUEEN by slapping them. Chopper and law would be great healers and fighters, but zoro and whitebeard being the main powerhouses. Bepo would be for navigation.
